Guinness Marinated Steaks

Guinness Marinade

Ingredients:

  • 1/2 pint Guinness
  • 2 garlic cloves, peeled and crushed
  • 1/2 tablespoon whole allspice berried, ground
  • 1 inch piece orange peel

Directions: 

  • Stir the beer together with the garlic, ground allspice berries and then add the orange rind. 

 

Guiness Marinated Steaks

Delicious for the special occasion barbecue, they also make a great winter party dish. After reducing the marinade add a few tablespoons of heavy cream and heat quickly until thickened to make a lovely rich sauce. 

Ingredients:

  • 4 New York Strip steaks 
  • Guinness marinade (above)
  • Tablespoon olive oil
  • Salt
  • Pepper

Directions:

  • Trim all but a thin margin of fat off the steaks, then place in a shallow dish
  • Pour over the marinade, cover and leave in a cool place for at least 6 hours, turning the steaks over at half time. 
  • Five minutes before cooking the steaks, remove from the marinade and pat dry with paper towels.
  • Strain the marinade into a small heavy-based saucepan and boil rapidly until reduced by nearly half. This can be done in the kitchen or on the grill itself. 
  • Brush one side of the steak with a little olive oil and a little of the reduced marinade then cook, oiled side down on the greased grill of a pre-heated BBQ for 3-4 minutes for rare steaks, 4-5 minutes for medium, or 5-6 minutes for well done. Baste with the marinade while cooking. 
  • Brush the top sides with some oil, then turn over and cook for 3-6 minutes on the second side, again basting with the remaining marinade. 
  • Season generously with freshly ground pepper and salt before serving.
