Roadhouse Chili Recipe

Roadhouse Chili Recipe Ingredients

  • 4lbs beef sirloin
  • Kosher Salt
  • Coarse Ground Black Pepper
  • 1 tablespoon oil
  • 1/4 lb bacon, diced
  • 3 cups chopped onion
  • 2 cups chopped green pepper
  • 2 medium jalapeno peppers, seeded & minced
  • 4 cloves of garlic, finely chopped
  • 4 cups beef broth
  • 1 can crushed tomatoes
  • 2 bay leaves
  • 1 cinnamon stick
  • 2 tablespoons ground ancho chile
  • 1 tablespoon ground pasilla chile
  • 2 tablespoons ground cumin
  • 1 tablespoon brown sugar
  • 1 tablespoon dried oregano
  • 2 tablespoons chopped fresh cilantro

Directions

  1. Cut meat into cubes, season with salt & pepper and put aside
  2. Heat oil in a large dutch oven, add bacon and cook over medium-high heat until brown. Remove bacon and set aside for garnish.
  3. Brown all the meat in the bacon & oil and remove and put aside.
  4. Add onions, green peppers, jalapenos, season with salt & peppers and cook until soft. 
  5. Add the garlic and cook for one minute
  6. Add back the meat, the broth, tomatoes, bay leaves, cinnamon stick, chiles, cumin, brown sugar, the whole lot and stir it all up together. 
  7. Cover and bring to a boil
  8. Turn down the heat and simmer for 2 hours. 
  9. Finish with cilantro and service topped with grated cheese and bacon bits.
