This recipe is designed to finish right around midnight — tender, juicy brisket sliced or cubed for sharing as the ball drops.
Ingredients

1 whole brisket (10–12 lbs)

Yellow mustard (binder)

Killer Hogs AP (salt, pepper, garlic profile works best)

Apple or oak wood chunks
Instructions
1. Prep the Night Before
Trim excess fat, leaving about ¼ inch on the cap. Lightly coat with mustard, then season generously on all sides. Wrap and refrigerate overnight.
2. Fire Up the Smoker
Set smoker to 225°F using apple or oak wood for a clean, steady smoke.
3. Smoke Low & Slow
Place brisket fat-side up. Smoke until internal temperature reaches ~165°F (about 6–8 hours).
4. Wrap & Push Through
Wrap tightly in butcher paper or foil. Return to smoker until internal temperature hits 200–203°F and probes tender.
5. Rest Like a Pro
Rest wrapped brisket in a cooler or warm oven for at least 1 hour (2 is even better).
6. Midnight Finish
Slice flat against the grain or cube the point into bite-sized pieces. Lightly glaze if desired and return to heat for 10–15 minutes.
